The short one you describe is about perfect for 5 to 6 gallons , as a rough estimate. Secondary fermenters which is what the short one would make are always sealed by corks so that's not an issue. The big risk is will it be strong enough to hold about40 pounds of beer. If its not , you lose the jar , the beer and make a mess that will draw ants for about 100 years!
