Keep the carcass in a garbage bag to show its from that fish, and if the carcass is all stinky from sitting in the hot car overnight that would prove it wasn't Sundays catch. Better yet keep the stinky carcass sealed in a bag in the trunk so its not even on the boat. When they ask to see it, you take them to the truck to show them, again proving its from Sat and not Sun.

Just pray the bag doesn't have any holes in it, or your vehicle will smell even fishier than normal.
