I'm not in that industry but, to me that looks like an achievable entry into the market - there's a ton of fairs, tradeshows and festivals and the fixed costs associated with the business are very low, no building, dumpster, phone, electric, etc.

Sounds like a good idea, but you can only prepare food for sale in a commercial kitchen, not in your home.
